My fellow readers who follow YouTubers and other blogging people will be familiar with the concept of ‘What I eat Wednesday’. It basically is a documentation of what you eat throughout the day. I thought it was an interesting idea. Not sure if I’ll do it again though (cliffhanger…).

Also, two disclaimers before we start:

  • I’ll totally tell you if something is disgusting, I will not pretend everything is delicious. SPOILER ALERT: There were actually two instances where I thought ‘nah, this isn’t going to work’.
  • This was a day that I mostly spent at home and where I had time to cook.

BREAKFAST

Let’s start with my favorite meal of the day. And you can guess what I had for breakfast from the picture above.

I love me some porridge.

This time it was a mix of barley, rye and oats topped with peaches, coconut flakes and chia seeds with a good cup of Earl Grey on the side. Off to a good start!

SNACK TO KEEP THE ENERGY COMIN’

This is where I first thought ‘nah, this isn’t going to work’. After literally working out in the gym I thought it would be good if I’d try a new protein shake mixed with almond milk. But. NAH. I HATE IT. Disgusting aftertaste, disgusting while drinking it. Overall not a nice experience. If you know about any protein powders that you can recommend, let me know! Thanks!

LUNCHTIME

Ahh this one is a combination of all of my favorites: beets, herb goat cheese, pecan nuts and roasted chickpeas. I’ll sometimes either add arugula salad or wild rice but today it was the chickpeas only. Just preheat the oven, lay the chickpeas out on a sheet and drizzle with olive oil. Season to taste with pepper, salt or whatever you’re feeling. Wait until they get deliciously crunchy and you’re good to go.

It’s just a delicious mixture of textures, colors and crunchiness. Plus it’s so easy to make, right?

 

SNACK TO COMBAT THAT AFTERNOON SLUMP

Philipp thinks I’m gross but I have developed a serious obsession for medjool dates and peanut butter. It’s just such a caramelly, soft and delicious concoction, mhhh. Better than chocolate (I know it’s a daring statement but I stand by it and that means a lot coming from a chocoholic). Tell me, I’m not alone and you do like this combination, too?

DINNER

This is where the second big ‘this isn’t going to work’ happened. Unfortunately, it was at dinnertime. Normally I love everything by Ella. But this recipe. No. Didn’t taste the best. It was dull and hadn’t really a nice taste to it, I don’t know why. It’s oven roasted butternut squash on broccoli quinoa with a guacamole sauce on the side. I’m not going into more detail here because it just wasn’t good.

SNACKTIME (IT’S ALWAYS SNACKTIMEEE)

After dinner we’ve watched a couple of old episodes of Parks and Recreation (because we’re cool like that) and I had some red wine and chips. Delish. After that dinner it was like a god-sent revelation. Ok that is maybe a little exaggerated but still, it was soooo good. No picture of it though. Had to eat it.

    Oh my god sandi I had to laugh so hard!! I also had a terrible disappointing experience with squash but was pleasantly surprised by the crunchiness of the chickpeas. You remind me so much of me in the kitchen.. if I follow the recipe, why doesn’t it turn taste it???
